1. Saltfish
Saltfish is Saint Lucia’s national dish and is usually accompanied by unripened bananas (green figs). Salt fish often consists of kippered herring or dried and salted cod that has been cured with dry salt, soaked overnight, and preserved.
2. Pepper Pots
Pepper pots are traditional Saint Lucian stews that are thrown together with whatever ingredients that are left over in the cupboards. They often include meat or fish, and of course, fresh Saint Lucian herbs and produce. They may not look like much but they are hearty, warming, and full of flavor.
3. Accra
Accra is a very popular Caribbean dish and is served in restaurants all over Saint Lucia. Using salted cod (saltfish), these fish cakes are made with mixed spices and then fried.
4. Breadfruit
Unlike any other fruit you will have tried before, breadfruits are similar to potatoes but sweeter and starchier. This savoury fruit has a tropical flavour and is delicious stuffed or boiled – often complemented by a spicy sauce or mayonnaise.
5. Callaloo Soup
Made from the leaves of callaloo, a vegetable that can be found all over the Caribbean, this recipe originated from West Africa and is made with okra, coconut milk, onions, potatoes and garlic. In Saint Lucia you can find this dish with Saint Lucia lobster, conch, crab, or seasoned meat.
